Basic Curry Mixes

This works well with beef.

Whole Spices                Quantity (tsp)       Ground Spices                Quantity (tsp)

Coriander                                1                  Hungarian Paprika                   1
Black Cumin                           1                  Beetroot Powder                       1
White Poppy                           1                  Kashmiri Chilli                          1/2
Fenugreek                             1/2                Asafoetida                                1/8
Ajwain                                    1/2
Tellicherry Pepper                 1/2
Cloves                                   1/2

Dry fry the whole spices, leave to cool and grind. Then mix with the ground spices. I marinade the beef in it. Slow cooked with a base sauce of onions, tomatoes, garlic and ginger.
